They have their concepts and branding – all they need now is the financial backing. First up is Epoch, comprising Manchester chef Ruth and sommelier Emily, who have an idea to pair British wines with the best seasonal produce. Meanwhile, Scotsman Ewen Hutchinson hopes to take his award-winning street food to the next level by opening his own establishment.
